את "מאפיית לחמים" הקמנו בשנת 2002 ברחוב החשמונאים, קרוב אל האנשים הרבים שחולפים בו, מביאים אליהם את ניחוחות הלחם ואת מקצב העשייה של מאפייה מלאת חיים.
העבודה שלנו מתחילה מדי לילה ונמשכת מסביב לשעון ברוטינה קבועה, עם כללים מדויקים: התזמון, המינונים, היחסים, אופן הלישה, מידת חמיצות השאור, משך ההתפחה.
המטרה היא אחת – להוציא מדי יום בדיוק את אותו הלחם: הכי איכותי, טעים ומשובח תמיד עם אותו המראה, הטעם והתחושה. שיטות אפייה מסורתיות, חומרי גלם משובחים, וידע רב שאספנו מכל העולם קיבצו סביבנו קהל גדול ונאמן שמגיע, טועם, ומלווה אותנו לאורך השנים.
ממלא אותנו נחת להאכיל ולארח, אנחנו נהנים לראות את אלה שמנשנשים את הלחם ישר מהשקית עוד לפני שיצאו מהדלת, שמחים כשמסתכלים, מריחים, טועמים. אנחנו אוהבים כשיושבים אצלנו עם ספל אספרסו בגלל שנעים ומרגישים בבית. כך בדיוק חלמנו שיהיה.
המאפייה נוסדה על-ידי האופה אורי שפט, שנחשב לאוטוריטה בינלאומית בתחום האפייה, מחבר הספרים "לחם בבית" ו-"Breaking BREADS" ומעביר סדנאות אפייה וכתות אומן בישראל וברחבי העולם.
