Cupping (or cup-testing) is a coffee tasting method used in the coffee industry. It is performed all over the world according to uniform standards and specific protocols. The main purpose of cupping is to reveal the profile of the coffee. To achieve this, coffee is brewed in a universal way: ground coffee beans are placed in a glass, poured with hot water and left to steep undisturbed for four minutes. This method allows the coffee's flavor and aroma to fully develop. Cuppings are held at all stages of the coffee selection process, from the farm to the coffee shop. It is also an effective method for tasting and comparing several lots simultaneously. Baristas attend cuppings to gain insight into the potential of coffee beans and how to work better with a particular one. Those new to coffee attend cuppings to gain a deeper understanding of their preferences and to identify their preferred coffee origins. Catador CVA

Catador CVA replicates the industry standard SCA new coffee cupping scoresheet with an easy-to-use system of sliders to rate sensory criteria and tick boxes to mark off-cups in the categories of Uniformity, Clean Cup and Sweetness. Record your comments for each section, and total scores are tallied immediately and accurately on the top bar in the Total Score box. So simple, and yet it works perfectly. The three different formats are available: Affective, Descriptive and Combined. Catador CVA goes further to include administrative features that make it even more useful in the field. From the Home screen, you can add and delete cupping flights, identifying the number of samples in each group. After the day’s cupping is done (or when asked to turn in your Q Grader cupping evaluation), users can also permanently lock each flight so that it cannot be changed later. The system gives you a popup warning that the operation cannot be undone. No cupping scoresheet application can be fully functional in the real world unless you have some way to export the data. A PDF link generation is available to share with anyone around the world, with a unique URL. Cuppings are synced safely to the cloud for future reference or if you change devices.
